NUTTY QUINOA SALAD WITH WHOLEGRAIN MUSTARD
Ingredients
2 cups cooked quinoa
¼ cup celery, finely chopped
1 Granny Smith apple, cored and diced into 1 cm
½ cup tomatoes, blanched, skinned and finely chopped.
½ cup spring onions, with greens, finely chopped.
1 cup together of roasted cashew nuts, roasted sunflower, pumpkin or
watermelon seeds
For the dressing
2 tsps KA Gourmet whole grain mustard
¼ cup olive oil
1 tbsp apple cider vinegar
1 tsp honey
Salt and pepper to taste
Method
Put celery, tomatoes, apple and spring onions in a bowl with the quinoa.
Whisk together all the dressing ingredients and add to the vegetables and rice
till well coated. Garnish with nuts and seeds. Serve at room temperature.
