THAI FRIED RICE WITH SRIRACHA SAUCE

Ingredients:
4 tbsp vegetable oil
3 cloves garlic, finely chopped
1 medium sized onion, finely chopped
5 tbsp KA Gourmet sriracha sauce
1 tsp sugar
A pinch of salt
600 g cooked rice (around 3 cups)
2 eggs, lightly beaten
1 tomato, diced
½ green capsicum, chopped
Fresh coriander leaves, to garnish
Method
Heat oil in a large wok over medium and sauté garlic and onion until garlic is
golden. Add Sriracha sauce, sugar, salt and rice and stir. Push rice to one side
of wok, add a little more oil and pour in beaten egg. Allow to set slightly, and
then scramble. Stir egg through rice then add tomato and capsicum stir
several times and remove from heat. Garnish with fresh chopped coriander
leaves.
